Cod with olives

A recipe that belongs to my family tradition. When many gathered to celebrate Christmas Eve, in my grandmother's classic menu, cod with olives could not be missing.

Ingredients

800 gr of cod

200 gr of black olives

500 gr of peeled tomatoes

50 gr of raisins

30 gr of pine nuts

2 cloves of garlic

1 tablespoon of capers

flour to taste

extra virgin olive oil

seed oil

salt

pepper

Preparation

Brown the garlic in a pan with plenty of olive oil. When it is golden, remove the garlic from the heat and add the chopped peeled tomatoes.

Add the olives cut into small pieces, the pine nuts, the raisins that you have brought to light, the capers, a little salt and pepper to taste. Cook for 20 minutes over low heat.

In the meantime, cut the cod into strips, flour it and fry it in seed oil. When cooked, absorb the excess oil on paper and then place the cod in a baking dish and cover with the prepared sauce.

Bake for 30 minutes at 180 ° C.

As the cod will finish cooking in the oven, fry it only until it reaches a light browning.
